Scandinavian Gourmet DinnerCookingFrom those northern countries of Sweden, Norway, Denmark, and Finland, we will create an assortment of superb entrees and desserts balanced with soup and salad. A larger class will include the 14 recipes below, a smaller group will make fewer. Apple stuffed pork loin, Swedish meatballs, salmon with dill and lemon, cold poached salmon, carrot casserole, spinach soup, pineapple beet salad and cheese sticks. We can't forget the desserts: rice pudding, oska cake, Finnish nut logs, raspberry ribbons, oatmeal wafers and famous fruit soup. Summer Youth ProgramsSummer is always an adventure at hopkinsschools Community Education! Our goal is to provide a safe, enriching and fun summer for your child. We are committed to providing a wide variety of class options to meet every child's need and interest. Check out these summer programs: Camp Royal offers a variety of camps for students entering Kindergarten to 5th grade. We focus on flexibility, variety and affordability, as well as hiring only the best staff to spend the summer engaging with your child. We offer half day or full day camp options as well as supervised time from 8:30 a.m. to 9:00 a.m., 4:00 p.m. to 4:30 p.m. and over lunch time. All camps take place at the Eisenhower Elementary School. Camp Royal will take place Monday through Thursday, June 15 to August 13. Campers can be dropped off as early as 8:30 a.m. and picked up as late as 4:30 p.m. Camp Royal pick up and drop off will happen in the Eisenhower Elementary School bus loop. Parents will not be allowed into the building unless it's for an emergency. Breakfast and lunch will be provided to students attending a full day of Camp Royal during the summer meals program with School Nutrition. Camp Royal camps are available for registration until the end of camp. Register on a week by week basis. Be sure to register your student for a morning camp and an afternoon camp for a full day experience. Registration will close on the Wednesday the week before camps begin. Field Trip week will be offered August 17-20! Camps for Middle School Students including cooking, pottery, chess and STEAM classes. New this year: Royal Zone Summer Camp! Six-weeks of summer fun for middle school students. Driver Education classes throughout the summer. Please note that the grade listed for each summer class will be the grade your student will be going into for the 2026-2027 school year. Women’s Beginner 1 and Beginner 2 will be taught at the same time in the shallow end of the pool. Please read the descriptions below and then indicate your level by answering the Question waiting for you in the registration form. Beginner 1 - Swim ABCs for Fearful or Nervous SwimmersThis program is designed for adults who never learned how to swim or have anxiety around water. Participants will learn to be more comfortable and safer in the water. Participants will learn skills including putting face in the water while blowing bubbles, sculling, kicking, and back float / front float. Participants will be put into small groups of 1 to 2 swimmers and 1 instructor. Each participant will be able to progress at their own pace. Beginner 2 - Swim STROKE BasicsThis program is designed for adults who are comfortable in the water and have already mastered all the skills of Swim ABCs (described above). Participants should be able to float on their back and front and recover to standing without assistance. Intermediate 1 - Lap Swim This program is designed for adults who have already mastered all the skills of Adult Swim Beginner 3 and can swim at least 50 yards freestyle without stopping. Participants should also be able to swim 25 yards on their back without assistance. Participants will be assigned half a lane to share with another lap swimmer and allowed to swim at their own pace and will receive guidance and drills from the instructor to refine skills and endurance.Adult Fall 2026 -
Swing & Ballroom DanceMusic & DanceJay, trained under an Arthur Murray instructor, will teach East Coast Swing, Hustle & Waltz dances! Students receive individual attention in a group setting, something not found in every dance class. Review of the previous week's dance steps reinforces learning and helps you feel comfortable. Jay compliments all his students and is one of the best dance instructors in the metro area. Cruise lines around the world recruit him for his dance knowledge and skill.
